A Legacy That Inspires

In 1957, Hermann Rusch had a vision: to create opportunities for American chefs to learn classic culinary techniques without needing to go abroad. With support from The Greenbrier’s leadership, he launched The Greenbrier Culinary Apprenticeship Program — the first of its kind in the United States. Fast-forward more than six decades, and over 300 graduates have emerged from this world-renowned program, making their mark in the culinary world.

Over three years, you’ll dive deep into the art of cooking while, working in some of The Greenbrier’s iconic restaurants like Draper’s Cafe, Prime 44 West, and the historic Main Dining Room. You’ll master a savory or pastry path, gain hands-on experience, and level-up your skills in real kitchens.

Application requirements:

  • Two letters of recommendation.
  • A written essay detailing why you should be selected.
  • Résumé.
  • Working interview at The Greenbrier. Find the application here.

You must have one or more of the following:

  • An associate degree or higher from an accredited culinary school.
  • Five years of experience in a fine dining restaurant or resort comparable to The Greenbrier.
